Patti’s Famous Almond Roca
  • 2 Cups (1 lbs.) Western Family Butter
  • 2 Cups Western Family Granulated Sugar
  • 1/2 Cup Whole Almonds
  • 1 12 oz. Package Western Family Semi Sweet Chocolate Chips
  • 1/2 cup Ground Walnuts
  1. Set aside a large jelly roll pan.
  2. In a large, heavy pan, melt butter over high heat. Add sugar and stir continually until it begins to foam. Add almonds to mixture and continue to stir over high heat until mixture is a dark brown and sugar is completely melted. (If it starts to SMOKE, remove from heat for a moment.)
  3. Continue to stir as you remove the pan from the heat and quickly pour mixture onto a jelly roll pan. Tilt pan to spread evenly. Wait five minutes and then sprinkle chocolate chips over the top of the sugar mixture. When the chocolate chips are half melted, spread them evenly over the top of the sugar mixture with a spatula. Sprinkle the ground walnuts over the top of the chocolate.
  4. Candy is cooled when the chocolate is not shiny (At least 3 hours at room temperature.) Break into pieces and enjoy.
